Fun Blueberry Facts:

Blueberries have lots of Vitamin C, in fact 1 cup of blueberries has nearly 25% of the daily requirement of vitamin C. In addition they're also packed with fiber which helps with digestion. : ) Also what's great is that one cup of blueberries is only 80 calories, what could make a better more healthy and delicious snack.

New Watering System

I just wanted to share with everyone how cool our new watering system is. As you can see from the photo I've posted there's now a blue/black tube that runs the length of the rows, and what it does is drip water just onto area needed (the berry bushes). With this system in place we can use LESS water a big plus, and also water the berries during our business hours. way cool.

PS: Blueberries are still going strong. stop on by and pick some today!

Blueberry Cupcakes

1 package (18-19ozs) yellow cake mix
1/3 cup applesauce
3 egg whites
2cups fresh blueberries
1 1/4 cups water
Preheat oven to 350 degrees F. In large mixing bowl beat cake mix with applesauce, egg whites, and water for 30 seconds on low speed, then 2 minutes on medium speed. spoon batter into 24 (2 1/2" inch) aluminum or paper lined muffin cups. Evenly divide the berries onto the tops of the batter; do not stir ( although I think you should perhaps submerge them). Bake cupcakes following the package directions. cool completely.
Add frosting if you desire although I think they a just perfect without.
